Roasted Vegetable and Mozzarella Strudel

Ingredients

• 400g puff pastry sheet
• 250g Brimi Mozzarella Block, sliced
• 150g aubergine
• 200g red and yellow peppers
• 150g courgettes
• 1 tablespoon chooped basil
• ½ teaspoon oregano
• Salt and pepper
• 1 beaten egg

Method

1. Preheat oven to 180˚c
2. Cut the pastry in to two squares measuring 18 x 40cm
3. Slice the aubergine, peppers and courgettes and grill
4. Layer the grilled vegetables on top of the pastry
5. Add basil, oregano, salt and pepper and place the mozzarella slices towards the centre
6. Brush the egg along the edges of the pastry
7. Roll up and seal well
8. Place on a lined baking tray
9. Brush the strudel all over with egg
10. Prick the top of the strudel with a fork and bake for approximately 20 minutes or until golden brown
