Camembert and Tomato Spring Rolls


• 250g Camembert
• 6 sheets of filo pastry
• 8 sundried tomaties
• 2 tablespoons olive oil


1. Preheat oven to 180 ° C
2. Cut the Camembert into small cubes of about 1cm
3. Cut the tomatoes into small pieces and mix them with the cubes of Camembert
4. Cut each pastry sheet in half and brush with olive oil
5. Heap a tablespoon of the Camembert mixture towards the bottom of each sheet
6. Fold the outer edges of the pastry in towards the mixture and roll in to a spring roll shape
7. Fasten the roll with a cocktail stick and place on a baking sheet
8. Bake in the oven for approximately 8 minutes or until lightly browned and crispy
