Asparagus and Mozzarella Frittata


• 8 eggs
• 250g Brimi mozzarella, diced
• 250g asparagus
• 100g cherry tomatoes, sliced
• 80g ham, cut in strips
• 60g onions, diced
• 2 tablespoons chives, finely chopped
• 4 tablespoons cream
• 40g butter
• Salt


1. Preheat oven to 180˚c
2. Boil the asparagus for several minutes until just tender and cut into pieces
3. Fry the onions until lightly browned
4. Mix the eggs, cream and salt in a mixing bowl
5. In a non-stick pan melt the butter, pour in the egg mixture and allow to thicken
6. Add the ham, cooked onions, asparagus, mozzarella and tomatoes
7. Bake the frittata in the oven for approximately 8 minutes until cooked through
8. Sprinkle with the chopped chives and serve
