Chocolate Mousse with Cream Cheese


• 460g Madame Loïk Natural Cream Cheese
• 30g Paysan Breton Unsalted Butter, cubed
• 200g dark chocolate, broken in to small pieces
• 150ml of semi-skimmed milk
• 3 eggs
• 30g caster sugar


1. Boil the milk, and add the chocolate, mixing until smooth
2. Once cooled slightly, add the butter and stir well
3. Separate the eggs
4. Whisk the egg whites until stiff and gradually add the sugar
5. Add the egg yolks
6. Delicately stir through the cream cheese, keeping swirls of the cheese visible
7. Pour into small glasses or ramekins
8. Refrigerate for at least 3 hours or until set
