Mozzarella and Leek Tart


• 250g puff pastry
• 200g Brimi Mozzarella, diced
• 350g leeks
• 1 tablespoon butter
• 1 teaspoon chives, finely chopped
• 100ml milk
• 60ml cream
• 2 eggs
• 1 tablespoon grated parmesan cheese
• Salt and pepper


1. Preheat oven to 180˚c
2. Melt the butter in a pan and cook the leeks until softened
3. Add the chives and season with salt and pepper
4. Combine the milk, cream, eggs and parmesan with a little salt and pepper
5. Lightly crease a flan dish
6. Roll out the pastry and line the dish
7. Add the leeks and diced mozzarella to the dish and pour in the custard mixture
8. Bake in the oven for approximately 35 minutes or until golden brown
