Fillet of Beef with Roasted Peppers and Mozzarella

Ingredients

• 4 fillets of beef (approx. 120g each)
• 4 slices Brimi Mozzarella Block
• 2 red peppers
• 30g Butter
• 4 sage leaves
• Salt and pepper

Method

1. Preheat the oven to 180˚c
2. Wash the peppers and bake in the oven for 15 minutes still intact (including stalk)
3. Quarter the peppers, remove seeds and stalk and season with salt and pepper
4. Season the beef fillets and sauté briefly in a hot pan with oil until lightly browned
5. Cover the beef fillets with the sage leaves, the roasted peppers and a slice of mozzarella and cook in the oven for approximately 8 minutes until mozzarella is melted
