Mediterranean Stuffed Chicken Breasts with Goats Cheese


• 2 chicken breasts
• 120g Merci Chef Goats Cheese Log
• 20g pesto
• 15g roasted red peppers
• 15g marinated artichokes
• 20g breadcrumbs
• Pinch of salt and pepper


1. Preheat oven to 200˚c
2. Slice the chicken breasts down the centre to make a pocket
3. Spread the pesto in the centre of the pocket
4. Chop the peppers and artichokes in to small pieces and add to the pocket, along with slices of goats cheese
5. Seal pocket using a cocktail stick
6. Cover chicken breasts with breadcrumbs
7. Place in a dish and oven bake for 20-25 minutes or until cooked through
