Mini Goats Cheese and Rocket Pizzas



• 250g bread flour
• 150ml + 2 tbsp warm water
• 2 tbsp olive oil
• 7g sachet baker’s yeast
• Good pinch of salt

• 2 Merci Chef Goats Cheese Logs, sliced
• 200g Tomato puree
• 20 cherry tomatoes, cut in to 4 segments
• 100g rocket
• 50g pine nuts, toasted
• Drizzle of olive oil



1. Pour 2 tablespoons of warm water and the yeast in to the bowl. Let stand for 15 minutes
2. Add the flour to a separate bowl and make a well in the centre
3. Add the remaining warm water, olive oil, salt and the previously prepared yeast.
4. Mix gently by bringing the flour in to the centre of the bowl
5. Knead until the dough comes away from the sides
6. Cover with a clean cloth and let stand for 2 hours in a warm place
7. Knead the dough once again and flatten using a rolling pin
8. Cut circles of approx. 9cm diameter with a cutter
9. Preheat oven to 210˚c
10. Spread the tomato puree on the dough discs
11. Add sliced goats cheese, cherry tomatoes and pine nuts to each pizza
12. Bake for 15 minutes
13. Remove from the oven and garnish with fresh rocket and a drizzle of olive oil
