Mackerel Mousse with Thyme Toast

  • Soda bread
  • Golden rapeseed oil
  • Fresh thyme
  • Cracked black pepper and salt to season


  • 150g Smoked mackerel, shredded and bones removed
  • Lemon zest from half a lemon
  • 150g Paysan Breton Natural Spreadable Cheese
  • Selection of soft herbs (Parsley/Dill/Chives)

For Garnish:

  • Roasted cherry tomatoes


  1. Pre-heat the oven to 180°C. Slice the soda bread thinly, about 2mm, place on a baking tray and sprinkle with the golden rapeseed oil, fresh thyme, salt and pepper. Bake in the oven for 10-15 minutes or until golden and crisp.
  2. Gently fold the mackerel and lemon zest into the Natural Spreadable Cheese, season to taste. Blend in a blender until smooth, adding the soft herbs and a drizzle of oil if needed.
  3. Serve with the soda bread toast and garnish.
